Size depends on the type of fishing your doing. basically there are live bait hooks for live pin fish,shrimp or pilchards. Then you have long shank & short shank hooks. Each package of hooks are marked with a number. The most common size I use in saltwater fishing is #5/0 live bait hook & #2 hook for bottom fishing.
